Uses and Applications
1. Food Industry (E331)
-Sodium citrate dihydrate is one of the most important citrates used as a food additive:
-Buffering Agent: Maintains stable pH in food systems when combined with citric acid, forming a strong pH buffer
-Acidity Regulator: Adjusts and controls pH in various food products
-Preservative: Inhibits microbial growth, extending shelf life
-Emulsifier & Stabilizer: Prevents separation and improves texture in processed cheese, ice cream, and dairy products
-Flavoring Agent: Enhances flavor in jams, jellies, juices, beverages, cold drinks, dairy products, and pastries
-Gelling Agent: Used with citric acid as a gelling agent in jams, jellies, and desserts
-Antioxidant: Delays fat oxidation, preventing food spoilage
-Chelating Agent: Binds metal ions (Ca²⁺, Mg²⁺, Fe²⁺), reducing their interference in food processing
2. Specific Food Applications:
-Beverages, carbonated drinks, and fruit juices
-Jams, jellies, and marmalades
-Dairy products (ice cream, yogurt, cheese)
-Baked goods and pastries
-Processed meat products
-Sauces and condiments
3. Other Industrial Applications
-Electroplating: Used as a complexing agent and buffer in cyanide-free electroplating
-Detergent Industry: Replaces sodium tripolyphosphate in phosphate-free laundry detergents and liquid cleaners; enhances cleaning ability and prevents redeposition of dirt
-Photography: Used as a developer in photographic processing
-Chemical Synthesis: Acts as a buffer and reagent in various chemical processes
-Environmental Protection: Used for SO₂ tail gas absorption in metallurgical and chemical industries (absorption rate up to 99%), with regeneration of liquid SO₂
-Cosmetics: Used as a buffering agent in cosmetic formulations
