Properties:
*Sodium diacetate is a white, hygroscopic crystalline solid with the formula CH₃COONa·CH₃COOH.
*It has a characteristic acetic acid odor and exhibits a pH of 4.5–5.0 in aqueous solution.
*The compound is soluble in water and alcohol, and functions as a buffered source of acetic acid, providing sustained antimicrobial activity.
*It is stable under normal storage conditions but should be kept in sealed containers to prevent moisture absorption.
Primary Uses:
*Food Preservation - Widely used as a mold inhibitor and antimicrobial agent in baked goods (bread, cakes), extending shelf life by preventing rope formation and mold growth.
*Snack Foods - Applied as a flavoring and preservative in chips and other savory snacks, delivering a tangy vinegar taste while controlling microbial spoilage.
*Animal Feed - Acts as a preservative in feed grains and complete feeds, inhibiting mold and Salmonella growth; also serves as a nutritional supplement providing sodium and acetate.
*Meat and Poultry - Used as an antimicrobial spray or dip to reduce pathogens and extend freshness.
*Beverages - Functions as a buffering agent and acidity regulator in certain drink formulations.
*Others - It’s mainly used as complexing agent,oxidant, photosensitive material developing and bleaching agent,black-and-white film thinner.In the biochemistry field,It is used to eliminate the inhibition of enzymatic catalytic reactions caused by trace heavy metals, and used as plant cell culture.
