Maltodextrin is a white or yellowish amorphous powder extracted from starch extracted from corn or rice, liquefied and hydrolyzed by biological enzyme, refined, pre concentrated, and spray dried. Also known as water-soluble dextrin or enzymatic dextrin, it belongs to low DE value starch hydrolysate, with a glucose value (DE value) generally below 20. This product has no starch odor, is a flowing white amorphous powder, is not sweet or slightly sweet, and has a calorific value of 418.68kj/100g. Maltodextrin is a nutritious pure carbohydrate that is easy to digest and absorb. Good solubility, moderate viscosity, low hygroscopicity, not suitable for agglomeration, with good carrier and emulsifying and thickening effects.
Functions
Maltodextrin is used in various foods due to its mild taste, low sweetness, and weak moisture absorption.
