Properties:
*Sodium diacetate is a white, hygroscopic crystalline solid with the formula CH₃COONa·CH₃COOH. It has a characteristic acetic acid odor and exhibits a pH of 4.5–5.0 in aqueous solution.
*The compound is soluble in water and alcohol, and functions as a buffered source of acetic acid, providing sustained antimicrobial activity.
*It is stable under normal storage conditions but should be kept in sealed containers to prevent moisture absorption.
Primary Uses:
*Food Preservation - Widely used as a mold inhibitor and antimicrobial agent in baked goods (bread, cakes), extending shelf life by preventing rope formation and mold growth.
*Snack Foods - Applied as a flavoring and preservative in chips and other savory snacks, delivering a tangy vinegar taste while controlling microbial spoilage.
