Benzoic acid can exist in food in the form of free acids, esters, or derivatives, and has become an important acidic food preservative due to its low cost and minimal harm to human health.
The safety of benzoic acid has been recognized by the Joint Expert Committee on Food Additives (JECFA), with a daily allowable intake of 0-5.0mg/kg body weight.
